5 Ways to Add More Greens to Your Daily Meals

Green leafy vegetables are a good source of vitamins, fibers, amino acids, and minerals such as calcium, iron, magnesium, potassium, zinc etc. Greens are really good for our health and we must include them in our diet on daily basis. There are so many ways we can include them in our meals from soup to salad curries, breads, rice delicacies, etc. Here are some easy to follow recipes with details and step by step photos. 1.Spinach Corn Curry– Spinach corn curry is an easy to make delicious and healthy curry. Spinach has a high nutritional value and is extremely rich in antioxidants, folic acid, and vitamins. This spinach and corn curry goes very well with plain rice and can also be served with bread.

2. KaleIndian Style–Kale is one of the healthiest green leafy vegetables. It is also often called as super-food. Kale is very rich in Vitamin C, Vitamin A, Vitamin K1, and fiber. It also has a lot of essential minerals. Kale belongs to the family Brassicaceae (old name Cruciferae). Some other common vegetables of this family are mustard, radish etc. Kale is used in smoothies, soups, stir fries, and salads, etc.This is anIndian way to cook kale. A very delicious and healthy way to add more kale to your plate. This kale preparation goes very well with lentils, soups, and also breads.

3. Spinach Paratha –Paratha is a pan-fried Indian bread. Spinach parathas are extremely delicious and are a very good way to increase greens in your kids’ food, as the color actually attracts them. You can also use these breads as a wrap.

4. Saag Paneer–Saag paneer is a very famous Indian curry preparation. Saag is a Hindi word for green curry and paneer is a variety of Indian cottage cheese. You can replace paneer with tofu if you do not find paneer. For this delicacy, mustard greens and spinach are used to make the curry. Fresh mustard and spinach can be easily found in super markets all around the year. However, you can use frozen greens if you do not find fresh greens.

5. Grilled Spinach Corn Sandwich–A delicious and healthy sandwich (picture shown above) made withcorn kernels, baby spinach, and Indian cottage cheese (paneer). You can replace paneer with tofu if you like to. Add some grated mozzarella cheese to add a new twist to this sandwich before you grill it.
